A bit of history....
These biscotti were made during the 15th century for sailors and horsemen who would be away for months at a time. They needed something sweet that did not spoil. These biscotti are made for dunking into wine.
I needed to bring a dessert to my book club tomorrow night. There will be wine, so what better biscotti to dunk into a wine????? These are between a cookie and a biscotti.
They are very fragrant with cloves, cinnamon, lemon, orange rinds and slivered almonds.
Here are the ingredients:
4 cups all purpose flour
2 cups sugar
2 TBS baking powder
1/4 tsp salt
1/2 lb unsalted butter, melted
6 eggs, beaten
1 cup slivered almonds
Rind of 2 lemons, plus 1/4 cup of lemon juice
Rind of 2 oranges
1 tsp cloves
1 tsp orange extract
1 tsp cinnamon
2 tsp ground anise seed
In small bowl, melt butter, set aside.
In a very large bowl, combine flour, sugar, baking powder, and salt.
Beat eggs in separate bowl, add nuts, cloves, cinnamon, orange extract and anise seeds.
Pour melted butter to flour mixture. Add beaten eggs mixture.
Mix thoroughly. Dough will be very sticky.
With wet hands, mold 2 logs.
Bake on greased cookie sheets at 350⁰for 20-25 minutes. Remove from oven. Let cool for a few minutes. Cut crosswise.place back into oven for approximately 10 minutes on each side.
Use individual cookie sheets for each log.
