Fresh Plum Cake

Went to farmers market in the next town and bought fresh plums to make a plum cake. I let the plums sit on my counter for a few days until they ripen, not too ripe but not hard. You'll need the following:

7 purple plums, sliced into eighths

Grated lemon rind from 1 lemon

1/2 cup brown sugar+1 TBS for topping

1/2 cup white sugar

1/2 tsp ground cloves, divided

1/2 tsp cinnamon, divided

3 large eggs

1 cup (2 sticks) unsalted butter, at room temperature

1 tsp good vanilla

1 1/2 cups all purpose flour

1 tsp baking powder

1/4 tsp salt

Directions:

Preheat oven to 350⁰. In medium bowl, combine flour, baking powder, salt, 1/4 tsp cloves, 1/4 tsp cinnamon. Whisk to combine.

In large bowl, place unsalted butter, sugars and carefully mix on medium speed. Add eggs one at a time. Blend until combined.

Add flour mixture a little at a time till completely incorporated. Add the vanilla. Set aside.

Slice up plums, add remaining cloves and cinnamon and 1 TBS of brown sugar. Add lemon rind. Toss to combine.

Butter an 8 or 9 inch spring pan and cover bottom with parchment paper. Spread entire surface with the prepared mixture.

Circle the slices of prepared plums using them all up. Make a pretty design, you know what to do.

Bake for 45-55 minutes depending on your oven.

Serve after letting it cool off. Serve with whipped cream or ice cream or just plain.

It's not a very sweet cake.

Note* I used a 10 inch heavy pan.
