Monday comfort food - Chicken meatloaf

Okay, so you don't like meatloaf- I get it. But, this meatloaf is special, know why? Because my meatloaf is stuffed and Cooks with an apron of sliced vadelia sliced onions. BTW, you can make it with ground beef, ground lamb, ground pork or a combination of any of these meats. However, you should use only chicken or only turkey.....now let's cook:

Ingredients:

1 lb ground white chicken

1 cup bread crumbs, any kind

1/4 cup milk

1/2 cup minced onion

1/2 tsp celery seed

1/2 tsp powdered onion powder

1 tsp any hot sauce, optional

1 tsp Worcestershire sauce

2 TBS barbeque sauce, divided

1 egg

3 oz mozzarella, cheddar, any kind of cheese

1 whole onion sliced

1 package of ready to eat mashed potatoes warmed up, or make your own

Olive oil

Directions:

Combine ground chicken, bread crumbs with 1/4 cup milk. Mix together.

Add egg, seasonings, and sauces. Set aside mashed potatoes for later.

Mold meatloaf into loaf size. With your hand, create indentation in center of raw loaf. Place slices of favorite cheese. Reconnect indentation to hide cheese, it's a surprise!!!

Place onions all around raw meatloaf. Paint the surface of raw meatloaf with a tablespoon of BBQ sauce. 

Drizzle olive oil, salt and pepper all over onions.

Place in preheated 350 degree oven for 45 minutes. Remove from oven.

Carefully frost the cooked meatloaf with the prepaid mashed potatoes.

Make peaks with fork, resembling meringue.

Place bake into the hot oven for an additional 10 minutes, or until peaks are golden.
