Company for brunch...an omelette is perfect

Omelette Appetizer

Having a crowd, here is an appetizer that is savory and satisfying......my husband whipped up his favorite.

Ingredients:

8 eggs

1/4 cup grated parmesan

Salt and pepper to taste

5 slices deli ham, chopped

3 slices deli swiss cheese, chopped

3/4 cup chopped cooked potatoes (could be leftover fries, or leftover home fries)

1/4 cup roasted peppers, chopped

Chopped fresh basil leaves

Directions:

Preheat oven 350. In large bowl, beat together eggs and grated cheese. Add Salt and pepper.

Add remaining ingredients and mix well.

In 8x10 stoneware pan, place about 3 TBS olive oil to coat bottom. Place on medium heat on top of stove. Allow the oil to get nice and hot. Slowly add the egg mixture into the hot oil and allow the eggs to set. When you see that the edges are getting done, move to preheated oven and bake for approximately 20 minutes till golden. Remove from oven and allow to cool.

Cut into squares and serve!
