Right out of the oven.....smell so good!

Chicken Sorrento Parmesan

My favorite foods come together like a marriage made in heaven. I am talking about eggplant and chicken cutlets. Top that all off with lean ham and provolone and then baked to perfection.

Look out.....the best combination on a plate.

Ingredients:

4 prepared chicken cutlets (see my recipe)

4 slices of fried eggplant (see my recipe)

4 cups+ prepared marina sauce (see my recipe)

Grated Parmesan cheese

4 slices of lean ham

4 slices of provolone cheese

Directions:

In oven proof pan or cookie sheet, arrange by putting enough marina sauce on bottom of each chicken cutlet. Top each chicken cutlet with some marina sauce. Top with grated Parmesan cheese. 

Top with a slice of fried eggplant and slice of ham on each.

Top with covering of marina sauce and then with provolone cheese, individually.

Top all four servings with more sauce and grated Parmesan cheese.

Bake in 350 degree oven just until all the servings are cooked evenly.

You can serve with spaghetti on the side.

Serve with a salad or steamed broccoli.

Serves 4

Enjoy with a dark rich burgundy wine.
