Italian Strada with Spinach

This Strada can be served for brunch, lunch or dinner. It's so easy and tasty. I am bringing this one to my book club potluck.

Ingredients:

3 cups of milk (whole)

10 eggs

1/4 tsp grated fresh nutmeg

Salt and pepper to taste

16 oz Italian bread, cut into small cubes (the older, the better)

10 oz. Frozen chopped spinach, defrosted and squeezed dry**

1/2 cup fresh cut parsley, chopped

3 cups shredded *Asiago cheese, divided

* You may use Swiss, Mozzarella, or any type of semi soft cheese.

 

 

 

 

 

 

 

You can also add 8 oz cooked and drained pork or turkey sausage to be added with the bread cubes.

Directions:

In large bowl, add eggs, milk and beat very well. Add 2 cups of the shredded cheese. Add remaining ingredients. With fork, press into the liquid mixture in a buttered 3 quart casserole dish. 

Top with remaining cheese. Cover and refrigerate all night. Next morning place in preheated 350 degree oven until golden on top, approximately one hour.

 

 

** I sauteed spinach in little olive oil and some onion and garlic.

Serve with a salad and a glass of wine...ooh la la
