Biscotti goes nicely with a cup of espresso

Easy Biscotti

These biscotti yield about 3 dozen 

In a large bowl combine:

3 eggs

1 cup white sugar

1/2 lb sweet butter (2 sticks), softened

1 tsp good vanilla

Blend these ingredients until foamy. Use a hand mixer for better results.

To the foamy mixture, add:

3 1/2 cups white flour

2 tsp baking powder

1/4 tsp salt

1 cup chopped filberts, almonds or walnuts

3/4 cup raisins

One lemon, zested

Directions:

With wet hands - in large greased cookie sheet, separate dough into thirds. With wet hands, mold three even logs. Sprinkle with white sugar.

Preheat oven to 350 degrees.

Bake for 40 minutes until logs are golden color. Remove from oven and let cool for 10 minutes. At this point, slice the logs and lay each biscotti flat and bake for an additional 10 minutes.

Merry Christmas Eve. I am so glad you tried them. They're a family favorite. Remember, you can make them with chocolate chips, dry cranberries, any other dried fruit chopped.

Jan...I can’t get over how your recipes are very similar to mine. I use pistachios & craisins. They’re my brothers favorite. I’ve also been thinking of baking. I ship them to a few people up north.
